Highly anticipated category introduction (phase 2)

Back on May 8th, I tried to reintroduce my first category, tree nuts, peanuts, and coconut. I made a rookie mistake of introducing all the things at the same time, probably because I didn't anticipate this category as containing a trigger. Well, I was wrong! Not even 3 hours after introduction I knew something was wrong. Though, because I am stubborn I didn't immediately stop, I tried to triage by omitting one of the four items but leaving the other three the same. Still having symptoms, I finally threw in the towel after 4 days of trying to pinpoint.
In retrospect, it wasn't all bad news. I did definitely identify coconut as a trigger as I mistakenly tried a soap I had thought I had checked the ingredients for when I did a deep diver of all things in my house, but apparently missed it and broke out in hives after use. This isn't directly link to EoE but I know to avoid it going forward nonetheless. Also, I found out what NOT to do for the next introduction.
I then waited almost a month until symptoms got back on track (partially due to seasonal allergies kicking up and me not feeling well so didn't want it to impact results).
I decided to put nuts on hold for now and try fish and shellfish. Learning from last time, this weekend I tried tuna. One type of fish only. I had a bite of raw tuna steak about an hour before dinner to see if I had any noticeable reaction before I made dinner out of it. I then made a delicious torched tuna poke bowl. Waited in anticipation for a few hours and to my relief, no symptoms! To be safe I then waited two days and am about to try tuna in another format, tuna salad sandwich for dinner tonight. Wish me luck and I'll post the outcome next time!
