Slow and steady...wins the race!

Well I did it, I tried FOUR types of soft cheeses, one cow, one goat, one sheep, and one buffalo milk. All were fine! The lady at the cheese shop now knows a quick version of my story and is super excited for me and has been very helpful when determining which cheeses to try.
I literally had a spoonful of almond butter on a whim yesterday, and no reactions at all to that! If I can bring back even some nuts, it opens a huge door for things to eat, so I'm going to start working on that as well. As far as I've come so far, there is still quite a lot of each category I skipped or haven't gotten to yet. But I'll get there, just gotta keep adding things here and there!
Today the plan is to try a wine I know for a fact has Chitosan (shellfish derivative) in it. I've read it's a sugar, (not protein which allergies react to) and it would be good to know if I have to call / be hyper aware when I try any wine or not so I'm ripping off the bandaid! Eek! Hehe
I've noticed that despite bringing back all these categories, I have found some super tasty recipes as part of this process and most of which are actually really healthy. (Blog picture is of a "pizza night salad" I had this weekend that is delightful and I'll be adding to recipes section soon!) I tend to stick to the EoE diet compliant recipes during the week and the weekends are where I usually have things that are not part of the diet more often. It's funny, in retrospect, how my view on how it was going to be like has changed. When the thought first crossed my mind to do this I was like "I'm not going to be able to eat anything"... Now, I know I can eat so many things, they just weren't my go to's before so I never looked for them specifically.
Tomorrow is my allergist follow-up appointment. I will be briefing him on my progress and how it's gone. Though I have not completed the process, I think I have a lot to educate him on. I'm really hoping he'll see my success and maybe take note of my website and help others in my shoes identify their triggers instead of of masking it and hoping it doesn't get worse.
