Whirlwind of a time

Okay so a lot has happened since my last post. Probably shouldn't have tried so many things in one time period but the opportunities presented themselves and I felt like I was on a role so it happened.
I went to a local cheese shop and wanted to get a hard cheese (lowest lactose) of all three kinds, cow, goat, and sheep. I made sure to try them each on a separate day and all three were a success!!! I certainly missed my cheese and am so excited about this win. I also tried salmon as I knew this was the second most likely fish for me to have, especially when out to eat, also with success! And finally, I tried oyster and littleneck clams at a raw bar as I was able to literally order just one of each which would be easier than trying to do it myself at home as I like to do normally. I tried one oyster first, and then had my main meal.. waited about 30 min and tried the littleneck. About and hour went by with no issues so I got a few more of each :-)
Also, this last week, I went through my cordoned off boxes of foods I wasn't able to have and took out the ones that I can have again.. I'm down to ONE box (originally 6). In so doing, I realized that the healthy gut powder I was having in my protein smoothies (daily) contains shellfish and since I now know that shrimp is a trigger I'm thinking that was the biggest contributor to how bad things got for me before I decided enough was enough. Luckily, they had a vegan version of that same stuff so I'm still able to have that.
After 4.5 months of all this ups and downs and starts and stops it is amazing to look back at how far I've come! I was out to eat the other day and took out my allergy card and was able to cross of completely half of the categories. It makes it so much easier and also, the anxiety about eating and wondering if I am going to have symptoms is almost nonexistent now. It is so freeing and is the one thing that has been keeping me going the most. (Well that and the support I have of friends and family, and especially my boyfriend)
I am actually looking forward to trying high lactose cheese this weekend... wish me luck!
